China is so big and covers so many diverse cultural regions that the term Chinese cuisines is far more accurate when describing Chinese food. The Chinese cuisines are over 2000 years old and the complexity and sophistication of ancient China allowed the creation of one of the 5 great cuisines of world history. Styles and tastes also varied by class, region, and ethnic background. This led to an unparalleled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture.

The Chinese cuisine that most westerners know is the cuisine of the Chinese restaurant. The British Chinese community is thought to be the oldest Chinese community in Western Europe, with the first Chinese having come from the ports of Tianjin and Shanghai in the early 19th century to settle in port cities such as Liverpool.

They opened the first Chinese restaurants in these ports and today every town in Britain has a Chinese take away. Chinese food became popular because of its simple flavoured sauces and cheap ingredients that made it affordable to everyone.

Chinese dishes like the spring roll appealed to western tastes. The name is a literal translation of the Chinese chūn juǎn . The fillings, size and outer wraps of spring rolls vary greatly across Asia. Western pallets seem to prefer deep fried crispy spring rolls with sprouted bean fillings with meat or prawns served with a sweet chilli sauce.

Noodle Chinese style dishes are very popular with the most common being Chow Mein. For the health conscious the stir fry became a main stay. Many Chinese dishes are cooked quickly in hot oil in a wok. Black bean or sweet and sour sauces are added and the dish is served on rice or noodles.
